Ulvan is a bioactive marine sulphated polysacharide that can be extracted from green algae. This biopolymer form thermoreversible gels depending on the chemical composition and structure, showing great potential. The cold-set gelling properties unique shear-thickening fluid of this could valuable for exploration ulvans as new source water-soluble biodegradable polysaccharides. lack cytotoxicity specific make these also useful novel biomedical applications. chapter presents an overview extraction conditions ulvans, which are key since they affect macromolecular distribution, rheological or textural, isolated biopolymer, offer wide application field. Their properties, atypical performance corresponding mechanical characteristics addressed. potential to formulate hydrogels, used in 3D printing, some representative applications will covered.
